Avocado, Tomato, and Arugula Salad

👉Ingredients:
▪️2 Tbsp extra virgin olive oil
▪️1 Tbsp balsamic vinegar
▪️1 small clove garlic, crushed through a press
▪️1/4 tsp salt
▪️1/4 tsp ground black pepper
▪️4 cups baby arugula
▪️4 ripe medium tomatoes (about 12 oz total), cored and cut into wedges
▪️1 large ripe avocado, halved, pitted, peeled, quartered, and sliced crosswise
▪️1/4 cup thinly sliced red onion
▪️1 tsp toasted sunflower seeds (substitute with slivered almonds or pumpkin seeds)

In a salad bowl, whisk the oil, vinegar, garlic, salt, and pepper together. Add the arugula, tomatoes, avocado, and onion; toss gently to mix. Sprinkle with the sunflower seeds.
